Quinoa Tabbouleh

Quinoa, parsley, and tomatoes are dressed with a citrus vinaigrette in this higher protein, gluten-free version of my favorite Mediterranean salad

Korean BBQ beef served in lettuce cups with pickled cucumbers, red cabbage slaw, and miso-ginger dressing



Spaghetti Squash or Zucchini Noodles w/ Choice of Sauce
